Timely Story that Connects Health, Nutrition, and the Super Bowl January 23, 2003 - With the Super Bowl scheduled for this Sunday and so much attention focused on Raiders Quarterback Rich Gannon, we believe this is a timely piece that connects nutrition with one of America's favorite pastimes, football. Rich Gannon from the Oakland Raiders has recently brought attention to Celiac Disease, an autoimmune condition triggered by the intake of gluten, a protein found in many common grains such as wheat, rye, barley, and products made from oats. Gannon’s pre-school age daughter, Danielle, is one of 1 in 150 Americans thought to be effected by Celiac Disease (Source: University of Maryland School of Medicine), whose symptoms can include diarrhea, constipation, anemia, infertility, osteoporosis and more. Celiac is one of today’s most under-diagnosed diseases (Source: Cynthia Kupper, RD, CD, “The Basics on Gluten Intolerance and Celiac Disease.”). While Celiac disease represents a severe food intolerance, up to 45% of the American population is effected, to lesser degree, by the same problem (Source: York Nutritional Laboratories). Many experts believe food intolerances are on the rise, and are usually connected to foods that constitute a large part of American diets. The Top 8 foods that account for 90% of all food allergic reactions are: 1) Wheat To create a nutritional alternative for people with food allergies and intolerances, and those concerned about incorporating healthy foods into their diet, Enjoy Life Foods has created a line of super nutritious foods that are free of common allergens.
